Zuppa Toscana

I know today is the first day of Summer and preparing a hot soup may not be what you had in mind for todays menu. But this soup is so easy to make and so delicious I could honestly eat it any day of the year despite the temperature outside.

This is a hardy Italian soup my Mom makes in huge batches for our entire family. She doesn’t have a recipe written down so I had to play with it a little bit to get the right quantities for a smaller serving, this recipe will serve about four people.


 3 Spicy Sausage Links. (Pork)

1 Bundle of Kale.

Rustic Potatoes. (Medium Size)

2 Cans of Chicken Broth. (14oz.)

1/2 Cup of Heavy Cream.

1 tsp of Red Pepper Chili Flakes.

1/4 tsp of Salt.


The only prep involved for this recipe is to chop both your potatoes (peel on) and kale into bite size pieces.


Next brown your sausage in a medium skillet. Once browned, combined all ingredients minus the kale into a large pot.

Note: My family likes this soup pretty spicy so if this is not suitable to your taste feel free to lessen the amount of chili flakes.

Cook combined ingredients on high until the potatoes are soft which will take about 3o minutes. Lastly, your going to stir in the kale and cook for another 5-7 minutes.


Doesn’t that look yummy!

Once the kale has cooked down, let the soup cool for a good 15 minutes before serving. I know it looks delicious but control the urge to dig right in, the soup will be extremely hot!
